Collards
Vegetable plant believed to be from the eastern Mediterranean region, collards belongs to the large family of cabbage. C & rsquo; is the & rsquo; one of its oldest members and the & rsquo; one of the toughest. Although & rsquo; it is primarily considered a forage plant in France for example, kale is consumed by the & rsquo; man in parts of the world such as Africa. In the southwest of France, however,, it is also found in some traditional dishes. Just like common cabbage, green cabbage is very rich in vitamins. This is one of the many varieties in the cabbage family which also has cauliflower, le chou pommé, Brussels sprouts, broccoli, kohlrabi or kale to name just the most common.
Smooth leaves, sometimes thick and ribbed are flattened or curled at the edge, according to varieties. The whitish central ribs are harder and unpleasant to eat. Cabbage has a strong flavor.
Fresh, it adds a spicy note to salads. Use it in moderation, because its texture and flavor are quite special. Blanch it a few minutes before cooking if you want its flavor to be less pronounced. Easy and quick to prepare, it can be eaten in many ways. I offer one of them here, and I share with you my cavalier cabbage omelet (coming directly from Brussels…(Voir l’interview d’Emilia PEDRO de Chakula here )the garlic semolina, onions and cayenne pepper
