Preparation : 5 minutes

Baking : 15 minutes

 

 

What you need

– 230 g of cooked and softened fonio. See here.

– 60 g sweet potato flour organic food roots

– 2 very ripe bananas, speckled with black or completely black

– 4 tablespoon of water

– 4 tablespoon walnut or hazelnut oil for taste

– 2 tablespoon of coconut milk

– 6 g baking powder or baking soda

– 1 pinch of fleur de sel

Preparation of the recipe

- In a salad bowl, mash the banana with a fork

- Add water, coconut milk, the sweet potato flour and the yeast make it a homogeneous dough

- Put the fonio, pinch of fleur de sel, walnut oil and mix well again

- Let rest 20 cool minutes

- Heat a large non-stick pan and cook the pancakes 3 by 3

1 pancake = 1 tbsp

- As soon as bubbles appear, flip the pancakes gently and let them cook a little more

- Proceed in the same way for the remaining dough

- Serve warm, accompanied by jam, hot chocolate syrup etc ... For this recipe, this is our famous citrus sauce, here, oranges that will do the trick and a brunoise of kiwi. (cut into small pieces)

 

 

 

Tips / advice / variants

*You can enjoy them warm or cold, with or without accompaniment

*You can flavor your pancakes (organic or untreated orange or lemon zest, ginger, cardamom, other spices of your choice…) and use other flours instead of sweet potato (manioc, fonio, thousand, yam, coconut …And the list is not exhaustive).
